When you make chicken stock, a good piece of advice is to make it in a big quantity. Make sure that you prepare a large amount of stock so that you will have more than enough to store and use for future kitchen adventures. That tasty chicken stock is very versatile and can be perfect for your next stew, casserole or soup. Once your stock is cooked, let the leftovers reach room temperature, then portion them into freezer bags.

Garlic can easily stay on your hands. To get rid of the odors that garlic and other pungent ingredients leave on your hands, rub them around the inside of your stainless steel sink. This will take care of the odors clinging to your hands and enable you to handle other ingredients without contaminating them with strong aromas.

Try cooking with saffron if you are all about trying new spices. Saffron has a very unique and exotic flavor. Saffron is a lovely spice that has been used for ages. It is a highly sought after flavor that people all over the world enjoy, making it the spice that is most expensive.

Down winter greens by the handful. Kale, collards and broccoli rabe taste much sweeter after the first winter frost. Only cook the greens that are fresh and colorful, discarding any that are limp or pale hued. Wash the greens well as they tend to absorb dirt easily during growth. Use a bowl of cold water to wash your greens with. Once washed, shake them off, and then rinse them until you notice the water is running clear.

You can make a fat-free stew or soup by using fat-free soup stock or broth. Season it mildly before you make the entire meal. Rather, cook a small portion first. Once you've tasted the meat, change the seasoning accordingly, then cook the entire piece of meat.

Try baking dishes that are oily, versus microwaving them when they need reheated to avoid greasy messes. Oil heats more quickly than other ingredients, and the strong heat that a microwave has will cause it to separate from everything else. Baking, however, gently and evenly warms up the entire dish, keeping the ingredients together.

By staying organized while cooking you can avoid making mistakes, such as burning your food. When your cooking area is organized, you will be more productive and avoid errors. Get organized to cut back on unnecessary food waste.

Make sure that prior to cooking, your utensils are sparkling clean. Leftover food could really screw up your next dish. This could allow bacteria to easily spread.

Try making your own dried tomatoes. Cut Romas tomatoes in lengthwise halves, or slice ripe regular tomatoes into half inch slices for drying. Put the tomatoes, cut-side up, onto a cooling rack and give them a light salting. Put a cookie sheet underneath the cooling rack and then set the pair in an oven heated to 190 degrees. Leave for as many as ten hours. The tomatoes can then be placed in plastic bags and stored in the freezer. Alternatively, dried tomatoes can be packed in a jar filled with olive oil and fresh herbs. The tomatoes will need to be refrigerated and should be consumed within a couple of weeks.

When boiling water to cook pasta, be sure to add a generous sprinkling of salt. This allows the seasoning to soak into the pasta, which will retain its flavor. Salting after boiling your pasta will not give the same effect of absorption.

If you are including raw onions in a salsa that you aren't going to be serving right away, use cold water and a paper towel to rinse and blot the onions. Onions that are raw have sulfurous gas in them. The gas can sometimes ruin an otherwise great salsa. Rinsing and drying the onions gets rid of the gas.

Leave the bone in your roast if you are in a hurry. It will cook faster because the bone will evenly distribute the heat inside your roaster. Once the roast has finished cooking, it is easy to go in there and remove the bone.

This way, your fruit will last for a longer period time. You'll also be able to enjoy fruits out of season when the mood strikes you.
